Tea Creations: Yeah, We Made Matcha and Houjicha Cream Puffs

One of our most popular recipes on TikTok. I think this one became so popular because of its simplicity while still being rich with color and flavor. A member of our staff made these and we think they did such a great job. Totally home made and they also use our Premium Restaurant Matcha and Houjicha Powder.

Here is is a list of the ingredients used as well as the recipe for them:

Custard Cream (Pastry Cream)
Egg yolk 3
Sugar 45g
Flour 17g
Milk 300g
Heavy cream 80g
Vanilla extract a few drops (optional)

1. Mix egg yolk, sugar and flour.
2. Add warmed milk into #1 and mix well.
3.Add vanilla extract.
4. Cook #3 over medium heat, whisking constantly until pastry cream begins to thicken, about 5 minutes. Once it thickens, continue to whisk, pausing every few seconds to check for bubbles, about 1 minute. When it begins to bubble, set a timer and continue whisking for 1 minute.
5. Let it cool down in the refrigerator.
6. Whip heavy cream and mix with 5.

Matcha/Houjicha Cream
Matcha powder 4g
Houjicha powder 6g
Sugar 20g
Heavy cream 120g

1. Strain matcha(and houjicha) and mix with sugar.
2. Add heavy cream gradually and mix well.
3. Whip #2 until cream begins to thicken.

Puff Dough
Water 85g
Butter 50g
Salt 1g
Flour 55g
Egg 2

1. Mix water, butter, salt and bring it to a boil.
2. Turn off heat and add flour.
3. Mix well and add the beaten whole egg gradually.
4. Drop dough on non-oil baking seat and cook for 40min with 350F

We could totally see these puff pastries being enjoyed on a weekend or holiday when you have some time to really relax and make something sweet in the kitchen. The use of both houjicha powder and matcha powder at a nice contrast of color to the dish and the flakey nature of the puff pastry works well with the houjicha tea.
