Tea Creations: A Comfy, Cozy Sencha Milk Pudding

A simple recipe with a beautiful color. Here are the ingredients you will need:

  • Milk 600cc
  • Sugar 40g
  • Gelatin 6g
  • Sencha powder 7g

The recipe consists of two steps
1. Bring milk to a simmer and mix all ingredients well.
2. Pour the ingredients into a glass cup and let them cool down until firm. (At least 4hours)

And it is done! Alternative to gelatin, you can probably use agar which can be found in a lot of Asian supermarkets, especially Japanese supermarkets. You can also find it on Amazon. Sweets and desserts can pair nicely with tea so we hope you enjoy this recipe.

To make the pudding, we used some of our Organic Sencha Powder. While we have a non-organic version of this as well, the organic version is nice because it comes in a larger bag which reduces waste. Sencha powder is great to use for recipes like this when you are going to be adding milk or sugar as the sencha powder can be a bit more bitter and astringent then matcha. This is because sencha gets more sunlight exposure, turning the L-theanaine in the leaf, which has more of an umami flavor, into tannins which are more bitter and astringent. Bitterness and astringency are not always a bad thing though and such flavors can help to balance ingredients that are sweet like sugar and unctuous like milk. We paired the pudding with our Genmaicha with Matcha tea bag. It has a slightly sweet and predominantly roasted grain aroma which compliments the sugary sweet notes of the pudding.
